I find it amazing to be able to get quality organic ingredients, even in NE Oregon at the end of the road.  It takes some planning and thinking ahead, but yes, once a month I can get bulk honey, nuts, organic dried fruit, organic seeds & pretty much everything it takes to make a JÖR Bar.

On occasion however, I will run out of an ingredient :-(.  This was the case last summer when I ran out of Almond Butter.  So, like every pioneer before me, I improvised and decided to make my own almond butter.  It was easy!  So easy in fact, that now I make fresh toasted almond butter before each batch of JÖR Bars.  I simply toast 3 cups of raw almonds on a cookie sheet for 10 minutes at 300 F.  When the pan is cool to the touch (about 20-30 min), I put the toasted (still warm) almonds into a Cuisinart & pulverize the almonds into a beautiful glossy nut butter.  It takes about 15 minutes to complete the process.  Sometimes I have to stop the Cuisinart & scrape the sides with a rubber spatula, but patience wins when the chopped nuts turn into a smooth butter.  I usually refrigerate any leftover almond butter, but it usually doesn’t get a chance to sit around in my kitchen for long!
